Matcha Mint Slices


For the base

1 cup medjool dates
1/2 cup ground almonds
1 cup desiccated coconut

For the filling

1 cup raw cashews, soaked overnight
1/4 cup coconut oil
1/2 desiccated coconut
1 tbsp pure maple syrup
2 tsp peppermint essence
1 tsp matcha powder

For the chocolate

1/4 cup cacao powder
1/2 cup coconut oil
1 tbsp pure maple syrup
1 tbsp nut butter



1. Blend the base ingredients in a food processor until well combined. Add 1-2 tablespoons of water to help the mixture stick together.

2. Press the mixture into a lined loaf tin and place in the freezer to set.

3. In the meantime, blend all the filling ingredients in a blender until smooth and creamy. Pour this mixture on top of the base layer, spread evenly and place back in the freezer. Leave for at least 2 hours to set.

4. Melt the chocolate ingredients in a small saucepan over a low heat and stir until combined. Pour the chocolate on top of slice and place back in freezer to set for another few hours before serving.

Makes approx. 8 square slices
