Gluten Free Peanut Butter Ice Cream Sandwich

These cookies go down an absolute treat during the hot Summer months!

 

WHAT YOU NEED

16 oz. smooth peanut butter (I love Pics Peanut Butter!)

1 cup Sugar

1 cup Light Brown Sugar

2 Eggs

1 tsp Vanilla Extract

2 tsp Baking Soda

½ tsp Salt

½ tsp Cinnamon

1L Vanilla Ice Cream

 

HOW IT'S DONE

1. Preheat oven to 180°c. Line a large baking tray with baking paper and set aside.

2. In a medium mixing bowl, mix together peanut butter, sugar and brown sugar. Then beat in the eggs, vanilla, baking soda, salt, and cinnamon until combined.

3. Take tablespoons of the mixture and place on the prepared baking tray, ensuring to leave room in-between each ball of mixture. Flatten the balls with the back of a fork.

4. Bake for 10–12 minutes until golden. Allow to completely cool before placing a scoop of ice-cream in-between two cookies and creating a sandwich.

Makes 12.
